Abstract

Food industry and wineries in particular are responsible for a significant part of the org. industrial pollution in France. This pollution has been characterized at the Caves du Sieur d'Arques winery. Dynamic simulation of waste rejection should permit to est. the variability of inputs at the waste treatment step of the wine process, to simulate recycling or valorization of these wastes and techniques of redn. of wastes. Cemagref and Imeca have developed an expert software for dynamic simulation oriented toward diagnosis of energy consumption in wineries. The application of this software to wastes redn. may contribute to set up strategies of waste treatment. Cemagref has proposed a methodol. for estg. daily wastes in wineries. This methodol. can be used for calibrating the simulator
