Research profile

Anteun de Groot is a postdoctoral research in the Self-organizing soft matter group at the Eindhoven University of Technology. His research focusses on understanding the assembly of biomolecules. He studies the link between molecular structure and physical properties by using techniques such as super-resolution microscopy, rheology, and scattering methods. Previously he worked on the link between casein chemistry and their self-assembly at liquid interfaces to understand stabilization of air-water and oil-water interfaces in dairy. Currently, his research focusses on elucidating fine structures (e.g. cell wall structure, coacervates, microtubuli) in plant cells by using super-resolution microscopy. 

Academic background

Anteun de Groot obtained his BSc in molecular life science and his MSc in Food technology from Wageningen University & Research (2015-2018). His MSc thesis introduced him to the field of interface science, where he studied the effect of processing on the interface stabilization by Asparagus protein extracts. Which inspired him to pursue a PhD on recombinant casein functionality for structure and self-assembly at liquid-liquid interfaces. After finishing this he continued in academia as a postdoc on super resolution imaging of plant cells.
