Soft materials are an integral part of our daily life. Think of gels, pastes, and foams used in cosmetics and household products, foods like yoghurt and bread, polymeric materials, or biological materials such as cells and tissues in our own body. These materials don’t behave like simple liquids nor like simple solids. Instead, they exhibit a remarkably rich phase behavior, which leads to a wide range of viscoelastic behaviors and other interesting properties.
